Ingredients

2 hours
8-10 people
  • 1 cupmelted butter
  • 1 1/4 cupbrown sugar
  • 3/4 cupgranulated sugar
  • 2 1/2 cupAll-purpose Flour
  • 1 1/2 teaspoonsalt
  • 1 tspbaking soda
  • 2 tspvanilla essence
  • 2large eggs
  • 2 cupbittersweet chocolate chunks

    Tip no.1--for sugar you can use only granulated sugar also in case you don't have brown sugar but then add only 1 1/2 cup of granulated sugar or little more or less according to your taste.
    Tip no.2-- take a chocolate bar and chop it into small chunks but don't make it too small a little smaller than bite size chunks will be perfect (you can use choco chips also as everyone use in this cookie but believe me the chopped bittersweet chocolate takes it to another level the choice is yours)

    Take a bowl seive all the dry ingredients and keep it aside now in another bowl add the melted butter and both the sugar and whisk vigorously until light and fluffy scrape the edges in between to make sure everything is incorporated well.

    After that add one egg again whisk for few minutes and then scrape the sides and add second egg and whisk again to make it fluffier. Do it with a hand mixer or stand mixer because it needs a lot of elbow grease and if you can do it by hands thats super cool. Once the mixture is light and fluffier add the dry ingredients in 3 batches to mix easily and properly.

    Scrape from the bottom and the sides and ensure there is no lump in it. Now add the chocolate chunks/choco chips and again mix it very well. Now your dough is ready it will look like a soft dough but don't add any extra flour to it it's perfect. keep it in the refrigerator for at least 1 hour or in case you want to store it keep in the refrigerator for upto 7 days the older the dough the better the cookies will be.     Now preheat your oven on 190°c for 30 mins in the meanwhile line your baking tray with parchment or butter paper take the dough out of refrigerator and make a ball of it you can make it smaller or bigger according to your preference but these cookies look more prettier in big size just measure it with any spoon or scoop or cup I measure it with my 1/4 cup measuring cup.

    Don't press it just put the dough balls like a it is in the baking tray it will flatten itself while baking. Don't put many cookies on the tray at a time 4-5 are enough otherwise it will overlap while baking and will not be in proper shape. Bake it at 190°c for 15 mins or according to your oven. Your know your oven much better mine takes somewhere around 18 mins. Put the rest of the dough immediately in the frigde otherwise the butter and chocolate both will start melting.

    Keep an eye on it all the time while baking when you see it's started to be golden on sides take it out from the oven that time the centre will be very soft and doughie you can even put your finger at that time but don't bake further it will be harder after cooling. Dont bake for a long time else it will burn from bottom these cookies are soft and chewy at the centre and crunchy on edges.

    Take out the tray from the oven immediately and bang the hot tray on the counter top few times to make crinkles on the cookies. Allow it to cool down completely on the cooling rack then store in a air tight container in room temprature. Do follow the small tips and accurate measuring and you end up in perfect cookies all the time. Make it and do share your experience.
