Ingredients

20 minutes

  • 2lbs 16-20 (med) sized shrimp
  • 1cup chicken stock
  • 1/2cup coconut cream or milk
  • 2teaspoon finely chopped garlic
  • 2teaspoon diced onion
  • 1/2of a shepherd/red pepper (your choice of spicy or non spicy pepper)
  • 1teaspoon fish sauce
  • 1teaspoon sugar
  • 1/4teaspoon cayenne
  • 1teaspoon corn starch
  • 1/4cup water
  • 1teaspoon chopped cilantro

Steps

    Step 1 – season shrimp with salt and pepper

  2. 2

    Step 2 – in food processor, chop 5 to 6 garlic cloves, it will give you about 2 teaspoons. That’s how much we will be using.

    Step 3- In the same processor, no need to clean up, add 2 tablespoon diced onions, I used shallots and half of a large shepherd pepper cut into chunks. Its not a spicy pepper. Chop them finely. I diced the shallots before adding to the processor because I wanted them quite fine.

    Step 4- In a large pan, on medium hi heat, add 2 teaspoon cooking oil. Add the seasoned shrimp and sear them for 1 and half minutes per side. Then remove from the pan.

    Step 5- In the same pan lower the heat to medium, then add 2 teaspoon cooking oil, 2 teaspoon chopped garlic and cook till fragrant.

    Step 6- Then added the finely chopped onion pepper mix and cook for few mins.

    Step 7- Add 1 cup chicken stock and stir.

    Step 8- Add ½ cup coconut cream or coconut milk. Mix everything in. I prefer coconut cream because of the thicker texture

    Step 9- Add 1 teaspoon fish sauce. And 1 teaspoon sugar to balance the flavor, Add ¼ teaspoon cayenne for some heat. Mix everything in.

    Step 10- Then add the seared shrimp. cook for 2 mins.

    Step 11- Add 1 teaspoon freshly chopped cilantro. Serve and Enjoy !!

It gives me an opportunity to nurture my family and friends, express my love and care for them.
