Teriyaki Salmon

This is a well-known and classic Japanese dish, and I think teriyaki sauce works best with salmon. However, I find, in many places in the UK that the salmon is been cooked too long and is dry. I love it when it’s a juicy piece of salmon covered by the sweet teriyaki sauce, you can also add some ginger to add a hint of spice.

Key Point:
Is to pan fry the salmon and add the sauce at the end. This way you control the cooking of the salmon and ensure the sauce doesn't get burnt.

Ingredients

Prep: 20 min Cook: 15min
2 people
  • 2salmon fillets (Roughly 100g each)
  • 5 tbspSoya sauce
  • 5 tbspMirin
  • 1 tbspSake
  • 1/2 tbspsugar
  • 1/2 tbspoil for frying

Steps

Prep: 20 min Cook: 15min
  1. 1

    Mix soy sauce, sake, mirin and sugar in a small bowl, stir the sugar until it dissolves.

  2. 2

    Place the fish in a bowl and pour the teriyaki sauce over the fish and let it marinate for at least 15 minutes.

  3. 3

    Heat the oil in a frying pan over a medium heat. Once hot place the salmon skin side down in the pan.

  4. 4

    Fry the salmon for around 3 minutes, skin side down, it’s ready to turn once the skin is crisp, if the fish is still sticking to the pan cook for a little longer. Then turn the fillet over for another minute.

  5. 5

    Once the salmon is golden add the teriyaki sauce, used to marinade the fish.

  6. 6

    Keep coating the salmon with the sauce until the sauce reduces to about a third and is slightly thicken and sticky.

  7. 7

    Then remove from the pan and serve. This can be served with rice or other Japanese dishes.
