In a large stock pot, place ham shank in 6 cups water, bring to a boil then reduce heat and let cook 45 minutes, transfer broth to a large bowl or measuring cup and set aside.

Bone ham shank and cut meat into 1/2" chunks, set meat aside
- 3
Using a small pick or butter knife, remove marrow from shank bone and add to broth ;)

Add olive oil to the same stock pot that is now emoty, Sautee onion until translucent, add ham, garlic, carrots, celery, potatoes, cumin, salt and pepper

Slowly add flour and stir until all vegetables are coated, Sautee 2 more minutes

Add 4 cups broth and 6 cups water to vegetable and ham mixture in stock pot, bring to a light boil

Stir in lentils and cook at a boil for 3 minutes, add granulated garlic, reduce heat and simmer until thick and lentils are soft, approximately 3 hours
