If y’all haven’t realized it yet, my Dad and I have the sweet teeth in the family. He put in his request for a coconut macaroon pie this year for Thanksgiving (2021). I found a great and tasty recipe on “Taste of Home”. The recipe makes just a tad more than fits in a pie crust. I put the extra in 4 ramekins.

Ingredients

35-45 minutes
  • 1 sheetrefrigerated pie crust
  • 2lg eggs
  • 1 can (14 oz)sweetened condensed milk
  • 1/4 cupbutter, melted
  • 1 tspalmond extract
  • 1/4 tspsalt
  • 1/4 cupall-purpose flour
  • 1 pkg (14 oz)frozen coconut (frozen coconut has more moisture, it’s not as dry)

Steps

35-45 minutes
  1. 1

    Preheat oven to 350*. Unroll crust into a 9” pie plate, flute edge. Refrigerate while preparing filling.

  2. 2

    In large bowl, beat eggs, milk, melted butter, extract, and salt until blended. Stir in flour. Reserve 1/2 cup coconut; stir remaining coconut into egg mixture. Transfer to pie crust. Sprinkle with reserved coconut.

  3. 3

    Bake on lower oven rack until golden brown and filling is set, 35-45 minutes. Cool on a wire rack. Enjoy!

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
