Ros omelette, also known as Ras omelette, is a snack and street food in Goan cuisine. Ros means "gravy" in Konkani. It is a spicy gravy, consisting of onions, curry leaves, black mustard seeds, scraped coconut and spices. Ingredients such as mushrooms or cauliflower are also commonly used. The omelette contains eggs, herbs, finely chopped green chili peppers, onions (or shallots), finely chopped fresh green coriander and salt, with many variations. The ros is cooked separately. The hot ros is poured over the freshly fried omelette and served with Goan bread (Pav).

Ingredients

  • 1 tablespoon(approx.) Refined Oil
  • 1medium Onion, chopped
  • 6Garlic pieces
  • 1 (1/2 inch)Ginger piece
  • 1Green Cardamom
  • 3Cinnamon sticks, 1 inch size each
  • 5Cloves
  • 1/2 teaspoonwhole Black Pepper
  • 1 teaspoonCumin seed
  • 1 teaspoonCoriander
  • 6whole Kashmiri Red Chili
  • 1/2 cupdesiccated Coconut
  • 1medium size chopped Tomato
  • 1/2 teaspoonSalt
  • 1/2 teaspoonTurmeric powder
  • 1 teaspoonRefined Oil
  • 1 tablespoonchopped Onion
  • as per requirementWater
  • 3Eggs
  • 1/4th teaspoon Salt
  • 1/2 teaspoonKashmiri Red Chili powder
  • as required Little amount of chopped Green Chili
  • as required Chopped Coriander leaves
  • 2 tablespoonschopped Onion
  • 2 tablespoons(Approx.) Refined Oil
  • as required Lime

Steps

    Add 1 tablespoon (approx.) Refined Oil in pan and heat

  2. 2

    Add 1 medium Onion, chopped and fry till translucent

  3. 3

    Add 6 Garlic pieces and one 1/2 inch Ginger piece

  4. 4

    Add 1 Green Cardamom

  5. 5

    Add 3 Cinnamon sticks, 1 inch size each

  6. 6

    Add 5 Cloves

  7. 7

    Add 1/2 teaspoon whole Black Pepper

  8. 8

    Add 1 teaspoon Cumin seed

  9. 9

    Add 1 teaspoon Coriander

  10. 10

    Add 6 whole Kashmiri Red Chili

  11. 11

    Add 1/2 cup desiccated Coconut and mix well

  12. 12

    Add 1 medium size chopped Tomato and stir

    Spice mixture is ready. Cool down to room temperature

    Transfer spice mixture to grinder for grinding

    Add 1/2 teaspoon Salt

  16. 16

    Add 1/2 teaspoon Turmeric powder and grind

    Next prepare gravy. Add 1 teaspoon Refined Oil in pan

    Add 1 tablespoon chopped Onion and fry till translucent

    Add spice paste and stir

    Add Water as per requirement and mix well

    Gravy is ready

    Next prepare Omelette. Crack 3 Eggs in mixing bowl

    Add 1/4th teaspoon Salt in Egg

    Add 1/2 teaspoon Kashmiri Red Chili powder

    Add little amount of chopped Green Chili

    Add chopped Coriander leaves

    Add 2 tablespoon chopped Onion

    Whip

    Add 2 tablespoon (Approx.) Refined Oil in pan

    Add whipped Egg in pan and fry

    Fold the Omelette

    Omelette is ready

    Serve the Omelette with gravy. Garnish with chopped Onion, Tomato, Coriander leaves and Lime
