Ingredients

  1. 1/2 cupbrown sugar
  2. 1/2 cupolive oil (can be replaced with regular vegetable oil, but olive oil gives the cake amazing moisture)
  3. 2eggs (room temperature)
  4. 1 teaspoonvanilla extract
  5. 4ripe bananas, mashed
  6. 1 1/2 cupsall-purpose flour
  7. 1 teaspoonbaking powder
  8. 1/2 teaspoonbaking soda
  9. 1/4 teaspoonsalt
  10. 1 teaspooncinnamon
  11. 1/2 teaspoonnutmeg (optional)
  12. 1 cuppecans or walnuts, chopped
  13. 1/2 cupchocolate chips (optional)

Cooking Instructions

    In a large bowl, add the sugar and oil and mix well.

    Add the eggs and vanilla, and mix well. Add the mashed bananas and mix well.

    In another bowl, sift together the dry ingredients: flour, baking powder, baking soda, salt, cinnamon, and nutmeg.

    Now add the dry ingredients to the first bowl (the wet ingredients) in 3 batches.

    Before adding the last batch, toss the nuts with the chocolate chips in the flour, then add them to the bowl (the wet ingredients) and mix all the ingredients well with a spatula.
