Ingredients

  • 1 cupCauliflower florets
  • 1 cupCarrot (cut into bite size cubes)
  • 1/2 cupgreen Beans (cut into small pieces)
  • 1/2 cupgreen Capsicum (cut into small cubes)
  • 1/2 cupPurple Cabbage (shredded)
  • 1/2 cupred pumpkin (cut into small cubes)
  • 1medium sized Potato (cut into small cubes)
  • 2-3 tablespoonGreen Peas
  • as required Some Cherry Tomatoes/or 1 big Tomato cut into small pieces
  • 1 handfulshreeded Cheese (I used Mozzarella)
  • For marinating
  • 1/2 cupbeaten Curd
  • 1/2 teaspoonKashmiri Red Chilli powder
  • 1/2 teaspoonmixed dried Italian Herb
  • 1/2 teaspoonCajun spice mix
  • 1/2 teaspoonGinger-Garlic paste
  • 1/2 teaspoonPink Salt
  • 1 tablespoonOlive oil

    Clean, wash and cut all the vegetables into bite size pieces. You can use any winter vegetables you prefer.

    Beat 1/2 cup of regular curd and and add in all the spices and seasonings as mentioned above in the marinating section.

    Mix well to make a thick paste.

    Place all the prepared veggies to a oven proof dish and add in the prepared marinating mixture.

    Mix well with the veggies and spread evenly to make a thin layer of veggies.

    Preheat oven at 180 degree C for 10 minutes. Then bake the prepared veggies for about 25 minutes in preheated oven at 180 degree C.

  7. 7

    After 25 minutes of baking, the veggies will be cooked nicely. Take out from oven and sprinkle a handful of grated cheese.

    Again bake them for abou 10 minutes or until cheese melts completely and getting some light brown spots.

    Remove from oven, rest for 10 minutes and then serve warm and Enjoy!
