First boil the potatoes in a pressure cooker on medium gas flame till three whistles. Remove the potatoes from the cooker and allow to cool. Remove a Peel of potatoes. Mash the potatoes in a bowl.

Now we will make besan batter. To do this, add besan in a large bowl, add salt, turmeric powder and asafoetida and mix well. Then add a little water and make a thick paste.

Now let's make potato vada stuffing. For this, heat oil in a pan and add mustard seeds and crackling mustard seeds then add asafoetida, sweet curry leaves and ginger, garlic and green chilli paste and suate it..

Now add turmeric powder and mix well. Add potato mash and mix well. Then add lemon juice and mix well.

Now add green coriander leaves and salt and mix well. Then leave the mixture to cooldown on room temperature. Now make small balls from this mixture. Heat oil on one side to fry potato vada.

Add baking soda and hot oil to the besan batter and mix well. Now dip all the potato balls in the batter one by one in this batter and coat the gram flour (besan).

Now add one by one potato vada after another in hot oil and fry on medium gas flame till golden brown.

Now our very tasty and delicious Mumbai Batata Vada is ready. Serve these tasty batata vada with fried chilli and tomato ketchup.
