Take 3 tbsp mustard oil and fry the cauliflower and brinjal and keep aside

In the same kadai add rest oil and add panchforon, dry red chillies, hing and ginger paste and add the potatoes and fry.

Add the pumpkin, broad beans, peas, tomatoes and cover and simmer. Just allow to cook the vegetables till soft. Add salt and sugar to taste

Add the fried cauliflower and brinjal and cover again. Once the vegetables get cooked add a dollop of ghee, garam masala powder and serve with Bhog er kichudi (recipe in link)
