Palak or spinach, the vegetable is abundant during this winter season and is loaded with amazing health benefits. This spinach paratha has a beautiful vibrant green color and is a fantastic healthy alternative that includes healthy greens. It is especially good for children who do not like spinach.

Rinse 200 to 250 grams of spinach leaves very well with water and then drain them.Blanch them for 5 to 6 minutes.

Add 2 cups of whole wheat flour, 1/4 tsp carom seeds (ajwain), 1-2 finely chopped green chilies (if using), 1 pinch of asafoetida (hing), and salt as required to a large bowl. Mix the ingredients together well. Add the spinach leaves and knead the dough with 2 tbsp oil.

Make small dough balls and roll into triangular paratha by folding

Fry both sides with oil and serve hot Palak paratha with some sauce or pickle of your choice
