Tonjiru is a classic winter dish in Japan. It's a dashi and miso based soup with pork and vegetables. It keeps your body warm and it is really healthy!

Tonjiru is a classic winter dish in Japan. It's a dashi and miso based soup with pork and vegetables. It keeps your body warm and it is really healthy!

Cut and prepare all the ingredients.

Make dashi stock in a pot by adding dashi stock powder sachet to water and heat under low heat for few minutes(Do not bring to boil). Remove the sachet.

Slice up the meat into thin strips.

Heat some oil in a deep frying pan or pot and cook the meat until almost cooked. Add all the ingredients except the tofu into the pan (tofu should be added last as it breaks easily).

Add the dashi stock to the pan with ingredients and let it simmer. Cook it on a low heat for 10-15 minutes.

Once all the vegetables are cooked and become soft, stir in miso paste, soy sauce and sesame oil. (Tip:Dissolve the miso in a ladle and mix with the soup.)

Serve the soup in a bowl, sprinkle some chopped spring onion and shichimi on top of the soup!
