Combine the milk, honey or agave, orange peel, and cinnamon stick in a saucepan. As soon as it starts to boil, remove from heat, cover, and let it steep and cool.

Preheat the oven to 400°F (200°C) with heat on both top and bottom. Line a baking sheet with parchment paper. When you put the torrijas in, switch the oven to broil (top heat only).

Place the bread slices in a dish and pour the infused milk over them. Let them soak well, then use two spatulas to carefully transfer each slice to the prepared baking sheet.

Beat the egg and mix with ground cinnamon. Brush this mixture over the bread slices to help them turn golden brown.

Bake for about 10 minutes or until golden brown under the broiler.

When you take them out, drizzle a little honey or agave on top, or you can coat them in a mixture of sugar and cinnamon.
