My mom is my rock of Gibraltar. She is the most caring, forgiving, generous, and bright woman. She is behind all my academic achievements. Her words are still echoing in my ears. When I left for the USA for higher studies she said “Lakshmi, you may feel lonely. Though far away, I am there for you. I am always with you”. I always wonder how she could take care of 6 children, and give them the best in life. She never complained, never said an unkind word. She cooked three meals a day, simple tasty healthy food with good nutrients. She never used garlic in cooking. Sparingly she used onions. In cookpad India I see garlic and onion in all savory dishes. Garlic though good, simply overpowers the aroma and flavor of other ingredients. Food to mom is Annalakshmi. Nobody can make rice uppuma like mom. She used to make it in Vengala thavalai a cooking utensil made of bronze. It is not easy standing by the oven on hot summer days, stirring the uppuma constantly.
Apart from rice rava the most important ingredients for uppuma age ginger, black pepper, good quality asafoetida, cumin, and lots of curry leaves
I used to help her when I was a little girl. It was fun to cook with her. It has turned out great. Sridhar loved it. So I am dedicating this to you, mom and all the amazing women

Ingredients

  • 1/2 cup sesame seed oil
  • 3 cup rice rava
  • 1/4 cup urud dal
  • 1/4 cup toor dal
  • 10red chiles
  • 1 tbspblack pepper
  • 1 tspmustard seeds
  • 1 tspcumin seeds
  • 1/2 tspasafoetida (hing)
  • 1 cup fresh curry leaves
  • 1 tbspginger, peeled, chopped
  • 2green chilies, chopped
  • to tasteSalt
  • 1/2 dry roasted cashews

    Make a check list. Keep all required ingredients within reach.
    Dry roast the dhals, black pepper and red chillies over medium heat in a saucepan, 3 minutes. When it gets aromatic, turn of the heat. Cool. Coarsely grind in a blender. Add this to the rava.

    Place the rava in a bowl, soak in 6c of boiling water and salt. Cover and rest 15 minutes. Cook in a pressure cooker. Make sure that the rice rava is not over cooked. 80%cooked is ok.

    Over medium heat, heat oil in a cast iron kadai, add the mustard seed, 1tbsp urud. After the seeds splatter, add cumin seed, asafoetida, curry leaves, green chillies, ginger; roast for 2 minutes.

    Add the cooked rice rava, mix thoroughly with a spatula. Tbreak the lumps if any. here should be no lumps. Cook covered for 5 minutes. Uppuma is ready. Taste. Garnish with curry leaves and cashews. Serve
