Crispy toasted bread crumbs

Use up old and stale bread and make handy breadcrumbs that can be used in salads, soups, pasta and to crust fish or meat. leftover sourdough needed to be used up so what better way to have a tasty treat for everyone to enjoy throughout the week. I made four batches each with a different flavour combo.

Use up old and stale bread and make handy breadcrumbs that can be used in salads, soups, pasta and to crust fish or meat. leftover sourdough needed to be used up so what better way to have a tasty treat for everyone to enjoy throughout the week. I made four batches each with a different flavour combo.

Slice or tear your bread into small pieces.

Blitz in a food processor into a fine crumb and sprinkle roughly 1cm layer over a baking tray. Drizzle with olive oil and season well with sea salt and black pepper. Mix it through to coat all the crumbs.

🍞. Depending on taste you can add additional flavours to infuse the crumbs. I made 4 batches:
1️⃣ A "plain" version with just salt and pepper.
2️⃣ One with a sprinkle of dried rosemary (which goes well with meat).
3️⃣ One with chilli flakes (perfect for soups or pasta)
4️⃣ last batch I added finely grated peel of one lemon (perfect for crusted fish or pasta) - 4
Bake in a preheated oven at 140c for 20 - 30 minutes until all the moisture is removed and the breadcrumbs are crispy. You can periodically remove and toss or turn the crumbs to get an even bake and to make sure nothing burning if you like.

Once ready allow to cool completely and place in airtight containers to store for up to 2 weeks. Enjoy
