I made this cake using the recipe for banana and cornmeal wraps because I didn't have banana leaves or bijao leaves... it turned out delicious...

I made this cake using the recipe for banana and cornmeal wraps because I didn't have banana leaves or bijao leaves... it turned out delicious...

Mash the ripe plantains.

Add the remaining ingredients to the mashed plantains and mix well.

Pour the mixture into a baking pan lined with parchment paper and sprinkle 1 teaspoon of sugar on top for better color and texture.

Bake at 350°F (180°C) for 50 minutes.

Let cool before removing from the pan.

Slice into portions.
