Beat the egg, sugar, and salt together until combined. No need to beat until fluffy or until the sugar dissolves.

Add the milk and vanilla extract, and mix until combined.

Add the flour and baking powder, and stir until just combined.

Add the oil and stir until just combined. Do not overmix. Add the raisins and stir until just combined again.

Pour the batter into muffin molds. Decorate with chocolate chips if desired, or leave plain. Bake at 350°F (175°C) for 20-25 minutes.

I walked into the kitchen and saw the bounty of bananas slowly degenerating and was determined not to let them go to waste. Now I'm not a fan of baking but I thought why not try my hand at a simple banana bread recipe. It came out successfully and i really enjoyed it. It wasn't too sweet and the banana was not overpowering as it can be sometimes. It had a nice texture although nuts would've been a great addition. My family loves them.These are good at room temperature, but are awesome right out of the oven.If you want to use other type of flour or dry ingredients such as cocoa or matcha powder, replace a portion of the flour with the flour/powder of your choice.I'd suggest using a large bowl!
