Puran poli/green moong dal

Puran Poli is soft and flaky flatbreads filled with a sweet lentil mixture and laced with a liberal dose of fragrant ghee. The filling is usually made with chana dal or split Bengal gram cooked with grated jaggery, a kind of unrefined cane sugar that has a deeper flavor than regular sugar. Steps

Firstly take a pressure cooker soak green dal for 15minutes. Drain off the water and add water pressure cook for 6 whistles on medium flame.

Transfer the dal to a large pan add 1cup jaggery and mix well. once the jaggery melt then adds coconut and starts to mash the dal. Mash until a smooth paste. Then mixture thickens and holds the shape.

Now add ghee and cardamom powder and cook for a minute or until the mixture is undercooked then the stuffing will be sticky and will be difficult to make a ball.

Prepare poli:first in a large bowl take wheat flour and all-purpose flour, turmeric, salt, and oils. Mix well making sure all the ingredients are well combined. Now add water as required and start to knead the dough.

Knead to a smooth and soft dough adding wAter in batches. grease the dough with 2tsp oil. Cover and rest for at least one hour. after one hour knead the dough again. pinch the ball-sized dough and make a smooth ball. form a cup by pressing the dough from the sides. place a ball-sized prepared Puran. Start to stuff inside by pulling the dough without having any pleats. Now seal the dough without any kracks. dust the ball with purpose flour and flatten slightly.

Now roll the holige gently without putting much pressure. Now cook the Puran Poli on hot Tawa keeping the flame on medium. Flip over once the base is half cooked spread the ghee on both sides and cook well. Puff the Puran Poli making sure to cook uniformly.

Finally, eat puran poli and enjoy.
