First, slice the onions thinly. Heat a little butter and oil in a pan, add the onions, and sauté until golden brown.

Chop the tomatoes and blend them into a puree.

In a blender jar, add the sautéed onions, roasted whole spices, and garlic cloves.

Add a little water and blend into a smooth paste.

Cut the paneer into large pieces. Soak them in warm salted water to soften, or shallow-fry them in a pan with a little butter until lightly golden.

In the same pan, add the onion wedges and bell pepper pieces. Shallow-fry until slightly roasted, then set aside.

Wash and finely chop the cilantro.

In the same pan, add a little more oil or butter if needed and heat. Add bay leaves and cumin seeds for tempering. Add Kashmiri red chili powder and turmeric powder, then add the prepared spice paste. Sauté until the oil separates. Add the tomato puree and salt to taste, and cook.

Add the garam masala or kitchen king masala and mix well. Once the spices are well cooked and the oil starts to separate, add water as needed, mix, and cook.

Add the yogurt or heavy cream. Cook the gravy until it thickens to your desired consistency.

Add the roasted onion wedges and bell peppers to the gravy.

Add the paneer pieces and the crushed roasted dried fenugreek leaves (kasuri methi). Mix and cook for 2-3 minutes.

Add the chopped cilantro, mix, garnish, and turn off the heat.

Your kadhai paneer is ready! Transfer to a serving bowl and serve.

Prepare jeera rice to serve alongside.
