Pour the liquid caramel into the dish you’ll use for the flan, or make caramel in the microwave if you prefer.

In a large bowl, beat the eggs with the sugar.

Add the mascarpone cheese and mix well.

Add the vanilla extract and milk, then mix one last time.

Pour the mixture over the caramel and microwave on high for 10 minutes. Check with a toothpick—if it doesn’t come out clean, microwave for another minute or two as needed. Mine was ready in 12 minutes.

Let it cool, then refrigerate—overnight is best. Enjoy!
