This is a simple recipe for people living in dorms or who don't have much time. I use laab chili seasoning as a shortcut. Grill the frogs over medium heat until they're just dry—if they're not dry enough, they can have a strong smell. Be careful not to burn them.

Bring water to a boil and add sliced galangal, bruised lemongrass, bruised shallots, and kaffir lime leaves.

Once the water is boiling, add the grilled frog pieces. Let it boil for a while.

Add the laab chili seasoning and stir to combine. Season with MSG, seasoning powder, fish sauce, and salt. Stir well and taste, adjusting as needed.

Add chopped green onions, cilantro, culantro, and Vietnamese coriander. Let it cook briefly, then turn off the heat. Serve in a bowl. (If you have mint, you can add it for extra aroma.)
