Bharali Vangi (Brinjal Gravy)

Bharali Vangi is a traditional dish of Brinjal Gravy from Maharashtrian cuisine which is made with stuffing vangi /baingan/ eggplant with a spicy, flavourfull mix of masalas, nuts and seeds and then these are cooked in an aromatic spicy gravy ! Mouthwatering and delicious! Served hot with chapati, rice or masalebhat!
It's a protein and iron rich dish too!

Steps

First, wash and dry the brinjals. Then give them slits in a cross section but do not cut into pieces. Keep them dipped in salted turmeric water.

Now heat 1/2 tablespoon oil. Add chopped onion and garlic. Saute till translucent. Then add peanuts, sesame seeds, poppy seeds, red chillies, and saute till aromatic.

Then add all the spices, mix well. Add grated coconut and keep stir cooking till aromatic.

Now grind it to a coarse powder. Drain the brinjals and stuff them well with this mixture. Press well.

Heat a pan with remaining oil. Add mustard, cumin, hing, and stir well. Now arrange the stuffed Brinjals on the tempering and cover. Cook on low flame From both the sides till they are golden

Add the remaining stuffing mixed with warm water and cook well till done.

Squeeze lemon juice on top to finish the dish. Garnish with chopped coriander leaves. Serve hot with freshly made chapatis. Enjoy your meal!
