Steps

Blend your pepper, tattashe, onions and fresh tomatoes.

Ground your garlic and ginger

Set your pot on fire and put your oil, once it’s hot add in your diced onions and allow it fry until golden brown

Add in your ginger and garlic and fry them all together for an amazing flavour

Add in your tomato paste and allow it fry

Add in your blended tomatos, onions, pepper to make a stew

Add in your bay leaf, curry, maggi, onga,thyme..(any seasoning of your choice) t

Once the stew is ready..Pour in your washed basmati rice and stir together

Add your in your meat stock or chicken stock.. if you don’t have that just use water.. don’t add in too much water or stock because you don’t want to to cook the rice but rather steam it

Cover your pot with a foil paper and the cover and let it steam for 20 mins

Once it’s time open your pot..add in your butter, fried veggies, onions and mix together..cover your pot for just 2 mins so the flavors could circulate

Make a whole inside the pot and pot in a foil paper, put your coal and Add little oil to the coal then cover the pot for 5 mins immediately to get that Smokey/burnt flavor

After that,, your basmati jollof rice is ready.. Serve with any protein of your choice and enjoy ☺️
