Roasted mutton with peppers

Cut mutton in desired sizes. Wash. I love my mutton very soft. After washing I put in a pot. Season with salt and buillion cube, thyme, curry.

Put on fire. Add little or no water. Allow to cook till mutton absorbs all the liquid.

Blend scotch bonnet, garlic, ginger, onion. Fry your pepper paste with vegetable oil. Season to taste.

Put your cooked mutton in foil plates. Add your pepper sauce. Put in the oven and allow to roast.

Roast till your mutton achieves your desired texture. You can prick with a fork to test if well cooked and soft.

Finally cut your peppers in cubes. Add to your mutton. Put back in the oven for about 2 minutes.

Remove and serve. You can eat on its own or serve as an accompaniment to rice or pasta dishes. Enjoy.
