Ingredients: 3 green brinjals (medium size)(diced); 1 small portion of pumpkin (diced); 2 medium size potatoes (diced); 2 ridge gourds (diced); as required Small bunch of Malabar spinach (chopped); 1.5 tbsp refined oil; 1 tbsp mustard oil; 1 tsp Panch phoron; 1 onion sliced; 1 tbsp ginger garlic paste; as required Chopped vegetables; as required Chopped Malabar spinach; 1 large tomato (chopped); to taste Salt; 1/2 tsp turmeric powder; 1/2 tsp red chilli powder; 1/2 tbsp coriander powder; 1/2 tsp cumin powder; 1 tsp curry powder; 1/4 tsp garam masala; as needed Water; as required Chopped coriander leaves for garnish

Vegetables taken:
3green brinjals (medium size)(diced)
1small portion of pumpkin (diced)
2medium size potatoes (diced)
2ridge gourds (diced)
as required Small bunch of Malabar spinach (chopped)
For curry
1.5 tbsprefined oil
1 tbspmustard oil
1 tspPanch phoron
1onion sliced
1 tbspginger garlic paste
as requiredChopped vegetables
as requiredChopped Malabar spinach
1large tomato (chopped)
to tasteSalt
1/2 tspturmeric powder
1/2 tspred chilli powder
1/2 tbspcoriander powder
1/2 tspcumin powder
1 tspcurry powder
1/4 tsp garam masala
as neededWater
as required Chopped coriander leaves for garnish

Chop the vegetables and keep aside.

Heat refined oil. Splutter panch phoron. Add sliced onion. Saute till brownish.
Add ginger garlic paste and cook it till rawness is lost. Next add potato. Cook for some time till it is bit soft. Then add the softer vegetables. Put mustard oil. Mix and saute for some time.

Add salt and turmeric.

Mix and cook all together till veggies are cooked. Next add red chilli powder, coriander powder, cumin powder and curry powder. Add the chopped tomato. Mix, cover and cook all together at medium heat.
Add water just covering the vegetables.

Cook for some time. Then add the chopped malabar spinach. Cook uncovered till the spinach is softened.

Give a nice gentle mix. Add water if necessary. Put garam masala and let it be on medium heat for some time till all the flavours combine well with each other.
As you get that awesome aroma, switch the flame off. Cover and let it be for some time.
Before serving put chopped coriander leaves, give a nice gentle mix and then serve with rice.
