Green Eyes Fried Rice

Inspired by the release of Harry Style's new album Harry's House today, which is jam-packed with references to food, including the opening track 'Music for a Sushi Restaurant', the first line of which I have used in the name of my dish. The amount of peas in my fried rice, gives it a 'green eyes' kind of vibe.

Steps

Wash and slice the spring onions on an angle. Reserve the white end for later.

Heat the oil in a wok, and add the spring onions (green ends) and the chilli flakes
- 3
Add the rice and peas and stir fry together
- 4
Add the five spice, vinegar then soy sauce, continue to stir fry
- 5
Move the rice to the outside of the wok, making a well in the middle, into which pour the eggs
- 6
Stir the eggs into the rice as they cook
- 7
Plate up, sprinkling white end slices of spring onion and sesame oil.
