Wash the brinjal well. Take brinjal, make a slit in shape of cross at the centre. Do not cut it through. Keep aside in water.

Take a grinder jar add roasted groundnut, roasted coconut, garlic, green chillies, cumin seeds, ginger piece, and grind it coursly.

Now add red chilli powder, dry mango powder, coriander powder, turmeric powder, garam masala powder, hing, salt and mix it well then lastly add little oil and mix everything properly, oil gives nice binding, Stuffed masala is ready.

Now stuff the prepared masala into the slit brinjal, keep aside and reserve the extra mixture.

Heat oil in a kadai, place the stuffed brinjal in the hot oil and cover them and shallow fry on low flame.

After 2-3 minutes remove the cover and flip the brinjal after every 2 minutes flip brinjal and cook well from all sides. Then add remaining masala into the cooked brinjal and fry for just 2 minutes. When masala is fried well add chopped coriander leaves.

Stuffed Brinjal Masala is ready. Garnish with chopped coriander.
