Beef Ribs Stew with Lima Beans
Made by Rose Truong
Steps
- 1
Prepare all ingredients by cleaning them thoroughly and letting them drain.
- 2
Blanch the beef ribs in boiling water (or rinse under hot running water). Bring water to a boil. Add the beef ribs and wait for it to boil again, skimming off any foam. Add the onion and a little pink salt to the pot, reduce the heat to a simmer, and cook for about 50 minutes before adding the lima beans.
- 3
During simmering, occasionally skim off any foam to keep the broth clear. Once everything is cooked, adjust the seasoning to taste, and add chopped green onions. Serve the stew in a bowl and garnish with cilantro.
