Chicken and Squash Guyanese Curry

Ingredients

  1. For the chicken
  2. Fresh green herb marinade
  3. 4chicken breasts
  4. 1 tbspturmeric
  5. 1 tbspcumin
  6. 1 tbspgaram masala
  7. Oil for frying
  8. Veggies
  9. 2large green squashes, peeled, seeded and minced
  10. 3plum tomatoes, chopped
  11. 1white onion, minced
  12. 1 tbspminced garlic
  13. 1 tbspminced ginger
  14. 1yellow and 1 red bell pepper, chopped

Cooking Instructions

    Chop and marinate chicken overnight in green herbs and garlic.

    Bloom the spices in oil in a large frying pan. Add the chicken and brown, cooking through. Set aside.

    Add the veggies to the pan (except squash). Sautéed until tomatoes are soft

  4. 4

    Add squash. Cook down.

  5. 5

    Combine with chicken and let stew until squash is desired texture and most of the liquid has evaporated

  6. 6
