Garlic Shrimp with Paprika 🦐🌶️

Garlic shrimp is delicious any time of year, but we especially love making it in the summer because it's so quick and easy for hot days. This time, we've added a twist by including sweet paprika, which pairs perfectly with the garlic. To make it even more refreshing, we added freshly picked mint from our pot and a bay leaf for extra aroma. Truly delicious.

First, choose a large skillet or pan and add 3 tablespoons of extra virgin olive oil. Peel and thinly slice the garlic, then add it to the pan. Turn on the heat and cook the garlic, making sure it doesn't burn. After about a minute, add the peeled shrimp.

For a flavorful sauce, it's best to use the shrimp while they're still frozen so their juices add to the sauce. Add the white wine, coarse salt to taste, and a dried chili pepper. Then add the bay leaf and sprinkle in half a teaspoon of sweet paprika, preferably from La Vera if available.

Lower the heat and cook until the shrimp are done and the sauce has reduced to your liking. Add the mint leaves during the last few minutes to release their flavor.

Serve immediately. This dish is spectacular and perfect for a light dinner. Enjoy!
