Ingredients

2 servings
  1. 20 nos puris(readymade)
  2. For potato stuffing
  3. 4boiled potatoes
  4. 1finely chopped onion
  5. 1/4 cupchopped coriander leaves
  6. As Per TasteSalt
  7. 1 tspred chilli powder
  8. 1/2 tspcumin powder
  9. 1/2 tspchaat masala powder
  10. For chana stuffing (black chickpea)-
  11. 1 cupsoaked and boiled chickpea
  12. As per tasteSalt
  13. 1/2red chilli powder
  14. 1/2cumin powder
  15. For spicy mint water
  16. 1 cupfresh mint leaves
  17. 1 cupfresh chopped coriander leaves
  18. 1lemon
  19. 1green chilli
  20. 1/2 inchginger
  21. As per tasteSalt
  22. 1/2 tspblack salt
  23. 1 tspchaat masala powder
  24. For sweet water
  25. 1/2 cupsoaked dates
  26. 1/4 cupjaggery
  27. 1 tbsptamarind paste
  28. as per tasteSalt
  29. 1/4 tspblack salt
  30. Forgarnishing and other stuffing
  31. 1/2 cupnylon sev(readymade snacks)
  32. 1/2 cupSpicy boondi (readymade snacks)

Steps

    First prepare potatoes stuffing - for this, wash then boil potatoes till turns soft

    Peel off then transfer the potatoes in a mixing bowl, mash with a masher

  3. 3

    Now add all above ingredients which are mentioned above for potato stuffing, combine well and keep aside

    For chana stuffing (black chickpea)- soak 1 cup of chana overnight or minimum 4hrs

  5. 5

    Next day add salt and turmeric powder and cooked in a pressure cooker till turns soft

  6. 6

    After cooling drain all the water from cooked chana,add salt,red chilli powder and cumin powder

    Combine everything well and keep aside

  8. 8

    For preparing spicy mint water- take a blender jar add mint leaves and coriander leaves

    Also add all ingredients mentioned above, blend to a smooth paste

    Add cold water to adjust the taste and consistency

    Spicy mint water is ready

  12. 12

    Now for sweet water - soak dates for 1 hour

    Take a blender jar add dates, jaggery and tamarind paste and salt

    Blend to a smooth paste

  15. 15

    Add water to adjust taste and consistency and keep aside

  16. 16

    While serving, take a puri,make a small hole on top, stuff spiced potatoes,chana,sev and boondi

    Fill puri with spicy and sweet water according to your taste and enjoy Golgappa (or panipuri)
