Ingredients

120 minutes
Serves 9 servings
  • 3 poundspork belly
  • 2 1/2 cupscola (600 ml)
  • 2 cupswater (500 ml)
  • 1/2 cupcooking rice wine (100 ml)
  • 1/2 cupsoy sauce (100 ml)
  • 1/2 cuplow-sodium soy sauce (100 ml)
  • 1.8 ouncesginger, sliced (50 g)
  • 1 ouncegarlic, about 10 cloves (30 g)
  • 1 ouncerock sugar (30 g)
  • 1scallion, cleaned and tied, no need to cut
  • 3medium chili peppers, no need to cut
  • 1 teaspoonfive-spice powder
  • 1 teaspoonpepper

Steps

120 minutes
  1. 1

    Clean and cut the pork belly.

  2. 2

    Stir-fry the pork belly until it holds its shape, then remove from the pan.

  3. 3

    Sauté the ginger first, then add the garlic and continue to sauté. Melt the rock sugar and add the pork belly to color it. Stir-fry until slightly crispy. Add some soy sauce and rice wine. Stir-fry until fragrant, then remove from the pan.

  4. 4

    Place the pork belly in a stew pot. Add cola, soy sauce, rice wine, and water. Start braising. Add the scallions and chili peppers. Continue braising. Add five-spice powder and pepper. Finish.
