Chinese Braised Pork Trotters

They had some pig feet on sale this week, so i bought some. Found a few recipes, so combined 3 to make it quick and easy (for pigs feet). If you have Chinese 5 spice (I am not a fan, so don't have any) you could sub a teaspoon of the 5 spice for the anise and cloves.
The whole house took on an aroma of Chinese food, it smelled so good. And the pig trotters, OMG were they wonderful.
This was not difficult, but you have to like pig trotters, the soft skin and tendons, the sticky collagen, yum.

Ingredients

1 hour
2 servings
  • Pressure cooker
  • 2pigs feet split
  • Thumb sized piece fresh ginger
  • 1 tsp.Salt
  • 2 Tbs.Hot sauce (optional)
  • Water to cover pigs feet
  • Wok
  • 2 1/2 cupspressure cooker broth
  • 1finger size fresh ginger
  • 3garlic cloves
  • 1/4 tspanise powder
  • 1/8 tsppowdered cloves
  • 1 tspsalt
  • 3Tbl. Soy sauce
  • 3Tbl. White wine
  • 1Tbl. Sugar
  • 2Tbl. Hot sauce

Steps

    Clean your Trotters.

  2. 2

    Place trotters in a pressure cooker, put water in, to almost cover them.

  3. 3

    Add the rest of the pressure cooker ingredients.

    Bring pressure cooker up to pressure (15 psi on mine), turn down heat to just maintain pressure. Cook for 15 minutes.

    Let pressure release naturally, not rapid. About 10-15 minutes.

    Heat a wok/stir fry/large pot on medium. Add trotters and broth from pressure cooker.

    Clean ginger and garlic, slice them.

    Add the rest of the Wok ingredients

    Bring to a boil. Turn heat down to a simmer. Cover.

    Simmer for 30 minutes, but turn them over every 10 minutes.

    They are done.

    Serve.

    You can garnish them with chopped green onions, sesame seeds, flat leaf parsley. But I like them plain.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
