Ingredients

15 min + soaking
Serves 4 servings
  • 1garlic clove
  • 2large slices of melon
  • 3/4 cupcoconut milk (200 ml)
  • 1 cupblanched raw almonds (150 g)
  • 1 slicewhite bread, crust removed
  • 1drizzle of olive oil
  • Salt
  • For garnish
  • Red or black lumpfish roe

Steps

15 min + soaking
  1. 1

    Soak the almonds in water for 2 to 3 hours beforehand.

  2. 2

    Blend all the ingredients together in a high-powered blender or food processor until the mixture is creamy and smooth.

  3. 3

    Top the soup with small cubes of melon or a few spoonfuls of lumpfish roe.
