Previously, I showed how to make honey lemon Aiyu. With a can of Aiyu, a tablespoon of honey, Lemon juice, and ice. Today, I'm going to show how to make Aiyu from scratch.
Cooking Instructions

Scrape off Aiyu seeds.

Place seeds in cloth bag and rinse bag in tub of water.
- 3
Transfer the slimy liquid into refrigerator and it will eventually turns into jelly in few hours. You can adjust the firmness of this jelly by using either more or less water.

Authentic Tsubu-an (Chunky Azuki Bean Paste) Delicious Made from Scratch!
I watched my grandmother make it and tried to copy her. I read about the cooling method described in step 6 on the website of a traditional Japanese confectioner called Kanshundo. I think they do it this way to get rid of bitterness and to firm up the cooked azuki beans. I incorporated it into my recipe.There's no need to pre-soak the azuki beans before cooking. They have such thick skins that cold water doesn't soften them easily. Improper soaking can lead to unevenly cooked beans as well, so it's best to entirely forgo the soaking process.Cook the beans over medium heat for the 2nd half. It won't burn, but it does cook fast once you can mash it into a paste, so watch carefully for the right time to take it off the heat. For about 750 g when done. Recipe by Kamoshian.

I really wanted to try it, so I imagined what it would taste like and came up with this.If you don't have yuzu jam, you can use the skin of yuzu citrus fruits! Adjust the amount of jam and sugar to your taste. You can use leftover rice, just warm it in the microwave! Follow the instructions of the sushi vinegar you are using and mix in the suggested amount.
