Ingredients

2 servings
  • 1.5 cupcooked Rice
  • 2medium Tomato
  • 1small Onion
  • 1 tspred chilli powder
  • 1/4 tspMustard seeds
  • 1/4 tspFenugreek seeds
  • 6-7Curry leaves
  • 2 pinchHing
  • 1/4 tspTurmeric powder
  • as requiredSalt, Oil
  • Coriander Rice
  • 1.5 cupCooked Rice
  • 1 cupCoriander leaves
  • 2-3green chilli
  • 1/2“ Ginger
  • 1/2 tspCumin seeds
  • 2 pinchTurmeric
  • 1/2 tspCoriander powder
  • 1medium Onion
  • as requiredSalt, Oil
  • White Rice
  • 1/2 cupRice
  • as requiredWater

Steps

30 minutes
  1. 1

    Assemble ingredients for Tomato Rice

    Make paste of tomato and keep aside.

  3. 3

    In moderately heated pan add oil, add mustard seeds + fenugreek and allow to crackle, then add hing + curry leaves and sauté for 3-4 seconds then add onion and sauté till slight brownish.
    Then add tomato paste + red chilli powder + salt + turmeric + add 3-4 tbsp water and sauté till oil is seen at surface.

    Add cooked rice and give a gentle mix, simmer and cook for 3-4 minutes till moisture evaporates from rice.
    Cover and cook for 1-2 minute.
    Tomato rice is ready.

    Assemble ingredients for Coriander Rice

    Make paste of coriander leaves + ginger + green chilli + little water.

  7. 7

    In moderately heated pan add oil, add cumin seeds and allow to crackle, then add onion and sauté till golden brownish. Add coriander paste + coriander powder + turmeric + salt and cook for 2-3 minutes by adding little water.

    Then add cooked rice and mix gently, simmer and cook for 3-4 minutes till moisture evaporate.
    Cover and cook for 1-2 minutes, Coriander Rice is ready.

    For white rice, cook rice in sufficient water, drain excess water, white rice is ready.

  10. 10

    In serving dish / plate, arrange tri colour rice as per your choice or preference.
