We make wine and jam from our own grapes: spanish tempranillo, french mourvedre, and french grenache noir grapes. Lots of seeds. I make one quart jar of jam from 4 pounds of grapes, add agave syrup nectar. Here is how we remove the seeds, which reduces the jam to 3 cups of jam from 4 pounds of grape clusters. Year round summer sweetness for sandwiches.

Ingredients

2 people, 3 cups
  • 4 poundsripe Grenache Noir grape clusters, destemmed
  • 3/4 cupagave nectar, 1/4 cup powdered corn starch clear jel, 2Tbs lemon juice
  • 4 poundsMourvedre grape clusters, destemmed
  • 3/4 cupagave nectar, 1/4 cup powdered corn starch clear jel, 2Tbs lemon juice
  • 4 poundsTempranillo grape clusters, destemmed
  • 3/4 cupagave nectar, 1/4 cup powdered corn starch clear jel, 2 Ths lemon juice
  • Equipment: wide mouth quart size mason jar for each grape, potato masher, stainless steel foodmill (Amazon, $30), with 3 mm disc
  • Cost: $1.50 per pint jar, agave nectar in the store is $2 per cup

90 minutes

    Dip grape cluster Grenache Noir in cold water, do not rinse. Remove debris. Destem 4 pounds of ripe grape clusters, yields 3 pounds of grapes, put in dutch oven. Simmer till grapes burst. Mash with potato masher. Add agave nectar. Boil till jam reaches 220F degrees and is reduced by 1/3.

    Dip Mourvedre grape cluster in cold water, remove debris. Destem 4 pounds, yield is 3 pounds of grapes, put in dutch oven. Simmer till grapes burst. Mash with potato masher. Simmer till jam reaches 220F degrees. Add agave nectar. Simmer till jam is reduced by 1/3.

    Dip 4 pounds, of ripe Tempranillo grape clusters in cold water, destem, you have 3 pounds, put in dutch oven. Simmer till grapes burst. Mash with potato masher. Simmer till jam reaches 220F degrees, add agave nectar, simmer till jam is reduced by 1/3.

    Microwave quart mason jar 1 minute to sterilize, fill with jam till 1” below rim, seal, cool. Taste test weekly, the grapeskins will soften and impart their flavor on the jam. When you like the flavor, run cold jam through foodmill with 3 mm disc to remove the grapeseeds. Bring jam to boil with 1/4 cup cornstarch clear jel and 2 Tbs lemon juice. Do jam droptest on vertical cold plate with chilled metal teaspoon. If jam doesnt run, cool and store.

    Note: a teaspoon of agave nectar is 50% sweeter than a teaspoon of sugar. I posted my recipe how to make agave nectar in cookpad. You can also buy this nectar in supermarkets.
