Sardine Croquettes with Herbes de Provence

The name 'sardine' comes from Sardinia, where the ancient Greeks living on this Mediterranean island noticed the fish was abundant in its coastal waters. Sardines are rich in protein, calcium, vitamin D, iron, and omega-3 fatty acids. Mediterranean cities are full of sardine recipes. Today, I'm making croquettes—small patties to enjoy with a fresh mint sauce or aioli. You can almost hear the cicadas singing—it's Marseille!

  • 2.2 lbsfresh sardines, cleaned (about 1 kg)
  • 1 clovegarlic
  • 1shallot
  • 1 bunchparsley
  • 1 tablespoonbreadcrumbs (about 8 grams)
  • Spices (whatever you have at home)
  • 1 teaspoonground cumin (about 2 grams)
  • 1 teaspoonground turmeric (about 2 grams)
  • 1 teaspoonpaprika (about 2 grams)
  • 1 teaspoonsalt (about 6 grams)
  • 1lemon
  • Oil for frying

    Clean the sardines or have your fishmonger do it. Prepare all the ingredients by chopping them and measuring out the spices.

    Get your food processor or meat grinder ready for the next step.

    Chop the parsley, garlic, and sardines together, but don't make it too fine.

    Mix in the remaining ingredients.

    Form the mixture into small balls and flatten them slightly. Heat a skillet with neutral oil.
