Chicken Gizzards with Onions

A meat main course that not everyone appreciates... but I absolutely love it! These are known as chicken gizzards. I’ve always called them "gricili di pollo." The gizzards are scored and any leftover food residue, now a mush, is removed. They’re soaked in water with a little vinegar, then cooked with onion and deglazed with wine. After 30 minutes, they’ll be tender and flavorful. Add a sprinkle of pepper and enjoy.

Wash the chicken gizzards thoroughly and remove any remaining feed residue. Soak them in water with a splash of vinegar.

Meanwhile, slice the onion and sauté it in olive oil with red pepper flakes. Add the bay leaf. Add the gizzards and cook on all sides. Pour in the wine and let it evaporate.

Add enough water to cover the gizzards and cook for 30 minutes. Season with salt and pepper. When the liquid has reduced and a fork goes into the meat easily, they’re ready.

Serve with a good red wine and rustic bread.
