This is my mom's recipe for cochinita pibil, a traditional dish from the state of Guerrero, Mexico.

In a large bowl, soak all the ingredients except the stale bread and chocolate bar. Grind all the spices, chop the garlic and onion, and cut the chiles (no need to remove the seeds).

Let everything soak for 24 hours with 2 cups water (480 ml) and the apple cider vinegar.

Wash and clean the pork well, add 1 tablespoon salt, and let it rest in the refrigerator for 24 hours.

The next day, blend all the ingredients in a blender, add 4 more cups water (960 ml), and use this sauce to marinate the pork. Let it marinate for another 24 hours.

On the third day, cook everything in a large pot over medium heat for 2 hours.

While the meat and sauce are cooking, toast the stale bread and grind it. Also grind the chocolate bar.

After 1 1/2 hours of cooking, add the ground chocolate.

Next, add the ground bread and let it simmer for 30 more minutes, stirring occasionally to prevent sticking or burning. Add salt to taste.

Serve with white rice and your favorite salad. Enjoy!
