Tres Leches Cake

Cooking Instructions
- 1
Add the eggs and sugar to a bowl and beat until the mixture triples in volume.
- 2
Add the vanilla extract to the milk.
- 3
Combine the flour, baking powder, and salt, then sift together.
- 4
Once the eggs have reached full volume, remove the bowl from the mixer. Gradually fold in the flour mixture using a spatula, making gentle folding motions. Then add the milk and mix until just combined.
- 5
Pour the batter into a baking pan and bake for 25 minutes at 400°F (200°C).
- 6
Prepare the three milks mixture.
- 7
Once the cake is baked, remove it from the oven and let it cool. When completely cool, pour the three milks mixture evenly over the cake in the pan, making sure it soaks in well. I love it extra moist. Refrigerate for at least one hour or longer.
- 8
After chilling, remove the cake from the pan and decorate.
- 9
Whip the cream until it triples in volume, then use it to decorate the cake. Reserve some cream to color blue for additional decoration.

I found this recipe on 'Quiero Cupcakes' and have made it several times. It's absolutely delicious. Even though it's called Tres Leches Cake, it's really more like a sponge cake soaked in milk—just not in alcohol, haha. I hope you enjoy it as much as we do at home.
