Turai/Ridged Gourd and Chana Dal Curry

Turai is a soft and spongy rainy season vegetable. It can be cooked in many ways. In Bihar style this vegetable is cooked with chana dal/ chickpea. This recipe is very delicious too and goes well with roti/Paratha and rice.

Turai is a soft and spongy rainy season vegetable. It can be cooked in many ways. In Bihar style this vegetable is cooked with chana dal/ chickpea. This recipe is very delicious too and goes well with roti/Paratha and rice.

First cook soaked chana dal for a whistle in pressure cooker. Allow to cool. Chop ridge gourd, rounded and half boil them. Mix both dal and turai.

Heat oil. Add whole garam masala, bay leaf and panch phutan and allow to splutter.

Add red chilli and onion and cook till soften. Then mix garlic and ginger and saute till rawness is gone.

Add chopped tomatoes, cumin powder, coriander powder and kashmiri red chilli powder with half a cup of water.

Cook till the mixture thickens and become aromatic. Add chopped coriander leaves.

Mix the boiled dal and turai. Cook 5 minutes till the mixture is cooked. Bring down and add a teaspoon of homemade ghee. The Chana Dal Turai Curry is ready to serve.
