Preheat oven to 425 degrees.
Trim and thinly slice scallions, separating whites from greens; mince whites. Peel and mince ginger. - 2
In a large bowl, combine mayonnaise, sour cream, honey, sriracha sauce (to taste) and soy sauce. Set aside.

Cook jasmine rice according to directions.
While rice cooks, in a large bowl, combine beef, panko, scallion whites, ginger, salt and pepper.
Form into 20-24 1 1/2" meatballs - 4
Place meatballs on lightly oiled baking sheet. Roast until meatballs are cooked through, 14-16 minutes.
