Beef and onion stew

I made the stock for this using left over chicken bones from another recipe. I added some sage and onion stuffing mix for flavour and to thicken it a bit. I served it with buttery mash which you mix into it as you eat. Autumnal comfort food! #stew #beef #comfortfood

Cover the stock ingredients with about 1.5 litres of water in a large pot. Bring to the boil and simmer for about an hour. Drain reserving the stock.

In a large casserole dish, add the meat, chopped onion, chopped carrots, and stock. Pop in a preheated oven at 150 degrees Celsius for 2 hours.

After 2 hours, remove and add the stuffing mix. Adjust salt and pop back in the oven for another hour. Serve with buttery mash
