Cheap and easy to make, a great autumn/winter warmer. A real crowd pleaser for bonfire night and similar.
Spiced Caramelised onion and potato soup
Cheap and easy to make, a great autumn/winter warmer. A real crowd pleaser for bonfire night and similar.
Steps

Gently heat the oil and add the thinly sliced onion. Cover and gently cook to fully soften. Stirring occasionally. Peel and dice the potato and set aside. Boil a full kettle.

Peel and finely chop the garlic and thyme leaves, add to the onions and continue to cook.

Add sugar, spices and butter, cook to caramelise for a further 2 minutes allowing to brown lightly. Add potatoes and gently fry for another 2-3mins.

Add stock made with 900ml and 1 vegetable. Cover and gentle simmer for 20-30mins until the potatoes will crush against the side of the pan.

Blend until smooth (add more liquid if needed) finish with creamy milk and season to taste. Feel free to add more spices if needed. I like to finish mine with toasted caraway seeds, a drizzle of oil, crispy smoked bacon lardons and diced cubes of Brie. Yum!
