Achari Aloo Baingan

I have baingan and gobhi, both in the fridge. Gobhi is the most popular one in my family but baingan is my love, so today I chose Baingan over gobhi. I always make Afghan baingan or khatay Baingan but today I want to make something special with aloo miya … when I saw @asmasyed’s achari baingan recipe yesterday, I bookmarked it for dinner. Well, it turned out delicious and became a popular one at the dinner table.

Steps

Prepare the ingredients: chopped onion, cut slices of potatoes, and chopped tomatoes

Cut brinjals and brine them.

Meanwhile pour oil into a wok and add chopped onions. Saute it first and when it will turn soft and pink add Achari masala

Then add to ginger garlic paste. Add chopped tomatoes and other spices like chili powder and turmeric with salt.

Mix it well. Fry and cook until tomatoes become soft and oil comes up. Add brinjals

Then potatoes and yogurt. Mix it well

If water is required then splash water otherwise let it cook in yogurt-released water and tomato masala for 10 mins. Cover it and cook on medium flame.

Uncover and add whole chilies and coriander. And again cover it for 5 -10 min on low flame for steaming.

Sprinkle coriander and serve with garma gram chapati.
