Egg Bhurji (Indian-Style Scrambled Eggs)

Finely chop the onions, tomatoes, and green chili. Heat oil in a skillet. Add the onions and green chili, and cook until the onions turn slightly golden. Add the tomatoes and dry spices, cover, and cook for 5 minutes.

Crack the eggs into the skillet. Cover and cook on low heat for another 5 minutes. Add the garam masala. Once the eggs are cooked, stir and break them up with a spatula.

Cook for another 5 minutes. Add cilantro and break the eggs into pieces with the spatula. Your delicious egg bhurji is ready.

Serve the hot egg bhurji with roti or flatbread.
