Baked Eggs with Ham and Mushrooms

For quick and easy recipes, baked eggs (œufs cocotte) are a perfect choice. Just like pizza, you can customize them endlessly!
With fall bringing a variety of mushrooms and busy schedules making cooking time short, here’s a baked egg recipe everyone will love!
Use good-quality eggs, deli ham (try to choose options with fewer additives), white mushrooms, a bit of heavy cream, and Swiss cheese, and you’re all set!
Note: These are baked in a water bath for gentle cooking.

Preheat the oven to 350°F (180°C), using convection if possible. Cut the ham into small pieces. Quickly rinse the mushrooms under cold water and slice them. Grate the Swiss cheese.

Heat olive oil in a skillet and sauté the mushrooms over high heat until they release their liquid. Add the wild garlic powder or chopped parsley, then season with salt and pepper.

In a mixing bowl, combine the heavy cream with the grated cheese, then add the sautéed mushrooms. Mix well and adjust seasoning with salt and pepper. Remember, the cheese is already salty!

Butter 6 ramekins using a paper towel or pastry brush. Divide the cream/cheese/mushroom mixture among the ramekins, then top with the ham pieces. Crack one egg into each ramekin.

Fill a baking dish with water to about one-third of its height. Place the ramekins in the dish and bake for about 10 to 15 minutes, until the egg whites are set but the yolks are still runny. Watch closely to avoid overcooking the yolks!

Serve immediately with toasted bread and a green salad on the side.
