Gajar Methi is a simple Indian sabji made using carrots, fresh fenugreek leaves, and some spices. Serve it for your meals or pack it for lunch boxes with roti or paratha.
Steps

Cut Methi and carrots in small cubes. Add little salt in carrots and keep aside for 10 to 15 mins.

Take kadai.. Add oil. Put onions and garlic into it. Saute till it turns pink. Add ginger and saute of 2 mins.

Now wash carrots and add it to onions. Now saute for 2 to 3 mins. Add tomatoes and Methi.

Cover for 3 to 4 mins on lower flame. Now add all masalas like haldi, red chilli powder, coriander powder, garam masala and little salt. Mix well and saute till water is absorbed and vegetable leaves oil.

Now add little water and keep the flame low and cover it for 3 to 4 mins. Your veg is done.

Now your vegetable is done and you can serve it hot with hot phulkas, rotis..
