Smoky Baingan Bharta

Wash and make a smit on an eggplant. Insert garlic pods and smear oil over the eggplant. Roast it on a gas burner or grill it.

Cool and peel the outer layer. Remove the crown and cut it into half.

Heat oil in a pan. Add mustard seeds, cumin seeds, green chillies and asafoetida.Add onions. Let them turn translucent. Now add green peas, tomato and salt. Let them cook till it become mushy. Add turmeric powder, red chili powder and coriander powder. Mix well.

Now add smoked eggplant pulp. Mix well and garnish with fresh coriander leaves.

Serve with paratha aur Roti.
